"Copycat OATMEAL FUDGE BARS from Starbucks! These beauties are so rich and decadent..." Recipe Creator @lowcarb.yum
For the Oatmeal Layer, mix:
1/3 C Coconut Oil
2/3 C Allulose or LC Sweetener
1 Egg
1 t Vanilla
1 t Baking Powder
1/4 t Salt
1/4 t Cinnamon
3/4 C Almond Flour
2 Keto Krisp Almond Butter bars (to replace the oatmeal)
For the Fudge Layer, simmer:
1 Can Full Fat Coconut Milk
1/2 C Allulose
Rest of the fudge:
1 1/2 Cups @lilys_sweets
Chocolate Chips
1 t Vanilla
1/4 t Salt
1. Mix and spread 2/3rds of the oatmeal layer on parchment paper in an 8x8 pan.
2. Simmer fudge on medium heat for about 20-25 minutes until it thickens up - I added a pinch of xanthan gum to mine at the end to move the process along! Let it cool for a few minutes and then add rest of fudge ingredients.
3. mix well with a spatula.
4. Pour over the oatmeal mixture
5. Add the remaining 1/3 of oatmeal dough onto the top in chunks.
6. Bake at 325 for 25 minutes.
7. Cool in fridge for several hours and then slice into bars!
