Ingredients:

 

Chia Pudding 

  • 1/4 cup chia seeds  
  • 1 cup unsweetened almond milk 
  • 1 tbsp vanilla extract  
  • 1/4 cup erythritol 

Jam

  • 1 1/2 cup frozen raspberries  
  • 1 tsp lemon juice 
  • 1/4 cup erythritol  

Layers

Raspberry Chocolate Chia Pudding  Keto Friendly

Instructions:  

  1. In a sealable container, add unsweetened almond milk, chia seeds, vanilla extract, and erythritol. Seal and shake. Place in the fridge overnight or for at least 3 hrs. (Give it a shake halfway if possible) 
  1. In a small saucepan over medium-low heat, add frozen raspberries, lemon juice, and erythritol. Stir occasionally until thickened for about 15-20 minutes. Let it cool completely before serving. 
  1. Assemble the parfait by scooping chia pudding, plain Greek yogurt, Keto Krisp Raspberry Chocolate Bar, and raspberry jam. Repeat until desired layers are reached. Enjoy!
