Raspberry Chocolate Chia Pudding

Ingredients:
Chia Pudding
- 1/4 cup chia seeds
- 1 cup unsweetened almond milk
- 1 tbsp vanilla extract
- 1/4 cup erythritol
Jam
- 1 1/2 cup frozen raspberries
- 1 tsp lemon juice
- 1/4 cup erythritol
Layers
- 1/2 cup plain full-fat Greek yogurt
- 2 Keto Krisp Raspberry Chocolate Bars, crumbled
Instructions:
- In a sealable container, add unsweetened almond milk, chia seeds, vanilla extract, and erythritol. Seal and shake. Place in the fridge overnight or for at least 3 hrs. (Give it a shake halfway if possible)
- In a small saucepan over medium-low heat, add frozen raspberries, lemon juice, and erythritol. Stir occasionally until thickened for about 15-20 minutes. Let it cool completely before serving.
- Assemble the parfait by scooping chia pudding, plain Greek yogurt, Keto Krisp Raspberry Chocolate Bar, and raspberry jam. Repeat until desired layers are reached. Enjoy!
